N.B.: Your Rivsalt grater is comparable to a high quality chef’s knife. To keep it sharp, shiny and rust free wash it regularly with a mild dishwashing liquid and water after using a brush to remove loose liquorice. After washing, rinse with water and dry thoroughly with a tea towel.
